Dried shrimps are used to impart a unique umami and natural seafood-like taste. In Chinese and Vietnamese cuisine, dried shrimps have been used for centuries. For example, In China it's one of the ingredients used in the Cantonese XO sauce, famed for it's superior flavor, and in Vietnam it's used to impart unmatched flavor to many soups and stir-fry dishes. It can also be used in braised dishes, stocks and broths, salads, dumplings, etc., to add flavor.
 
How to use
 
There are many ways to use dried shrimp; some require soaking before using, while some do not.
 
As a rule of thumb, and for best results dried shrimps are pre-soaked before cooking to release maximum flavor. For soups and braised dishes, you can soak the dried shrimp for a shorter duration (30 mins to 1 hour) to loosen them up. If you’re using the dried shrimp in dumpling filling or meatballs, you’ll need to soak them longer (3 hours to overnight).
 
Some recipes, such as Pad Thai, only require pounding the shrimp to loosen their texture before adding them into the stir fry and in Japan, they are used to make Dashi or toasted and eaten as a snack, just like crispy potato chips!
